Julie Strain's Chili to Love
Too Hot for Kids
Cook/drain:
1 lb. beef
1 lb. pork
1 lb. veal
1 lb. Italian sausage
Add:
8 red onions
1 whole bunch garlic
2 red bell pepper
1 yellow bell pepper
1 green bell pepper
8 fresh tomatoes
3 very large cans of whole tomatoes
2 small ans tomato sauce
2 cans tomato paste
1 jar pepperoncini cut up
4 cans Ortega Hot dried jalapenos
4 cans Ortega mild diced chilis
3 Tbl. spoons chili powder
1-1/2 Tbl. spoons cumin powder
+ pepper to taste
Cook for 1 hour and 15 minutes.
Then add:
2 cans black beans
2 cans red beans
2 cans chili beans
2 cans pinto beans
2 cans large butter beans
2 cans small white beans
Cook 25 minutes more.
Stir gently so not to break beans.
Feeds an army and enough to freeze for winter.
Curses the common cold!
Serve with cornbread made from Jiffy box mix
Plain or with a combo of canned corn, gorgonzola cheese, chilis, jellied cranberry sauce, or diced onions
Sprinkle on top of bowl:
scallions and all grated cheeses. YUM!
